Roasted Asparagus with Parmesan Cheese

I have a hard time getting my family to eat asparagus. I have tried many recipes over the years until I ran across this recipe and prepared it for my big Father’s Day lunch. Finally I have a winning recipe and everyone will now eat asparagus.

This recipe comes from a favorite cook book of mine that I cook out of all the time: Eat what You Love by Marlene Koch.


1 ½ pounds asparagus spears, washed and trimmed
2 tsp. olive oil
Salt to taste
Fresh ground black pepper to taste
¼ cup grated Parmesan cheese


  1. Preheat oven to 450*.
  2. Toss the asparagus spears with olive oil, salt, and pepper.
  3. Spread evenly into a single layer on a flat baking sheet. Roast for 10 to 11 minutes, or until fork tender.
  4. Sprinkle with Parmesan cheese just before serving or if you prefer sprinkle Parmesan cheese on top of spears during the last 3 minutes of baking. Makes 4 servings.
